SWEET POTATO PIE



Makes 2 pies

4 sweet potatoes, baked
½ cup softened butter
2 cups sugar
4 eggs
½ teaspoon cinnamon
½ teaspoon salt
1 teaspoon nutmeg
¼ teaspoon cloves
1 2/3 cups evaporated milk
15 marshmallows
2 prepared pie shells

Preheat oven to 350 degrees.

Peel potatoes and mash well. Blend in all ingredients except marshmallows. Pour mixture into 2 pie shells. Bake until firm. Remove from oven and top each with marshmallows. Return to oven and bake until marshmallows melt and form a light crust.

For pie dough-
6 cups unbleached all-purpose flour
1 tablespoon salt
4 tablespoons cold, unsalted butter, cut into cubes
9 tablespoons cold water
3 tablespoons white vinegar

Place the flour and salt in a large bowl and work the butter into the flour until the mixture resembles coarse meal. Add the cold water and vinegar and mix well until the dough is incorporated. Divide into equal pieces and shape into disks. Wrap each in plastic wrap and chill for 2 hours to relax the proteins and make it easier to roll out.
