RICH PASTRY SHELL



Makes one 9-inch pie shell

2 cups all-purpose flour
Dash of salt
¾ cup butter, softened
2 egg yolks. Lightly beaten
2 tablespoons water

Place flour and salt in a large bowl. Make a well in the center and put into it the butter, yolks, and water. Using fingertips gradually pull in the flour. Mix until all ingredients are well combined and dough forms a ball. Cover. Chill several hours before using.

Preheat oven to 450 degrees. Roll out dough and place in a 9-inch pie pan. Prick the bottom several times with a fork. Bake 12 to 15 minutes, or until crust is crisp but not brown.
