BROWN DERBY COBB SALAD
Created in 1937 by Bob Cobb, manager of Hollywood’s legendary Brown Derby Restaurant, one midnight for good buddy Sid Grauman, owner of Grauman’s Chinese Theater. This iconic salad is fabulous!
4 cups chopped iceberg lettuce
2 cups cut watercress
5 cups cut chicory
4 cups cut romaine
2 medium vine-ripe tomatoes, cored, peeled, seeded, diced
2 cooked chicken breasts, diced
6 strips bacon, fried crisp and crumbled
1 medium Haas avocado, peeled, pitted, halved and cut into wedges
3 hard-boiled eggs, peeled and chopped
½ cup crumbled Roquefort cheese
2 tablespoons snipped fresh chives
Place iceberg lettuce, watercress, chicory, and romaine in a large salad bowl or deep platter. Arrange a row each of tomatoes, chicken, bacon, avocado, eggs and cheese. Sprinkle with snipped chives. Toss with Brown Derby French Dressing or pass dressing.
