HEALTHY VEGGIE SANDWICH

This is one of my favorites for lunch. Easy, delicious and healthy. Yum!

2 tablespoons reduced-calorie mayonnaise
4 slices best quality multigrain bread
½ ripe avocado, peeled
½ teaspoon fresh lemon juice
2 teaspoons chopped flat-leaf parsley
2 thin slices Monterey jack or cheddar cheese
1 roasted red bell pepper
4 thin, lengthwise slices of a peeled, seedless cucumber
2 to 3 large slices of ripe tomato
Salt and freshly ground black pepper
¼ cup alfalfa sprouts

Spread mayonnaise on 1 side of each bread slice. Set the top slices aside.

Mash avocado with lemon juice. Spread on 2 slices of bread. Sprinkle with chopped parsley.

Top with cheese slices. Lay half of roasted pepper on the cheese.

Cover with cucumber and tomato slices. Season with salt and pepper. Top each sandwich with sprouts, cover with the 2 tops of bread. Cut in half, wrap up.
