EGG, CHEDDAR CHEESE AND HAM BREAKFAST ROLLS



Makes 12 sandwiches

12 2-inch diameter sourdough or French bread rolls

8 eggs
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons butter
1 cup diced smoked ham
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley

Orange marmalade or apricot preserves (optional)

Hollow out rolls, leaving ½-inch thick shell.

Preheat oven to 350 degrees. Combine eggs, salt, and pepper in bowl; beat to blend. Melt butter in heavy large skillet over medium heat. Pour in egg mixture. Immediately turn off heat and stir until eggs begin to form soft curds, about 1 minute. Cool, stirring occasionally. Add diced ham, cheese and parsley. Adjust seasoning to taste.

Fill each roll with egg mixture. Place on cookie sheet. Bake until egg mixture sets and cheese melts, about 10 minutes. Cool 10 minutes. Serve with marmalade or preserves if desired.
