PINEAPPLE PUDHINA

Serves 4

A simple and delicious dessert!

1 whole pineapple
2 tablespoons sugar
7 fresh mint leaves
Juice of ½ lime

Cut the top and bottom off the pineapple and cut around the sides making sure all the tough skin has been removed. Slice into rounds and then remove the central core. Cut the hollow rounds into cubes.

Use a pestle and mortar to mix together the sugar, mint and lime juice. Once combined sprinkle over the pineapple and allow to marinate for 5 minutes before serving.
